Recipes

I have been testing out various recipes and my favorites are below.  Let me know if you have any questions about any of them.  I add a little here and there when needed so you may need to do the same.


Banana Cake:

2 cups sugar
1/2 cup butter, softened
2 egg yolks
3 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup milk
3 crushed bananas
1 tsp vanilla
2 egg whites, beaten

Combine the sugar and butter and beat on low until completely combined. Add the yolks and beat on high until smooth and fluffy. In a separate bowl, combine the dry ingredients; flour, baking powder, baking soda, & salt. Whisk thoroughly. You'll want the baking soda to be well distributed throughout the flour before adding the wet ingredients. Then, alternate adding the dry mixture and milk into the sugar and butter mixture. Start and end with dry and beat each time until just incorporated. Mash bananas and mix into batter. Add vanilla and beat until combined. Whip the egg whites until they form stiff peaks and fold into batter. Pour into pans and bake at 350 degrees for 35 min or until toothpick can be inserted in center and come out dry.

Cream Cheese Frosting:

2 (8 oz.) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted powdered sugar
1 tsp vanilla

Cream together cream cheese and butter until smooth then combine vanilla and gradually stir in sugar. (I add extra powdered sugar and some milk to thicken up a little more)

Fondant:

4 cups mini marshmallows
4 cups powdered sugar
2 Tbsp water
1 tsp flavoring

Heat marshmallows and water in microwave for one minute. Stir mixture till smooth then stir in powdered sugar.  Knead the ball that forms on a lightly dusted with cornstarch surface and add food coloring paste as desired. Wrap with cellophane and put in fridge. 


Buttercream:

1/2 cup shortening
1/2 cup softened butter
4 cups powdered sugar
1 tsp flavoring
2 Tbsp milk

Alternate recipe: (This one is tasty but best for fillings and crumb coats only)

1-1/4 sticks butter, softened
1-1/4 cups powdered sugar
pinch of salt
1 tsp flavoring
